I have been trying out solar accounts to do my first year accounts. I am about to go VAT registered though as it is more important for me now but is half way through financial year.
Is it possible to say when VAT applies from in solar accounts?

You cannot specify a particular date for VAT-registration in Solar Accounts. Instead, the VAT details are stored for each transaction. You will need to ensure that the VAT Treatment field on transactions before you registered for VAT is 'Out of Scope', while the the VAT Treatment field on transactions dated after you registered for VAT is 'Sale/Purchase of Goods or Services...'.
The easiest way to do this is to enter your transactions up to the date of VAT registration, then click menu Setup > Contact Details & VAT > Registered for VAT. Then enter the transactions dated after VAT registration.
