I have customers who order goods over the course of a month but just require one single monthly invoice. I wish to log all these orders as they occur rather than spend an hour raising an invoice at the end of the month.
I intend to use the quotes facility to do this and then copy to invoice at the end of the month. Would it be OK to delete the quote (after it has been copied to invoice) or would it affect any other transactions / accounts?

That is fine - deleting a quote will have no affect on the accounts.
