Am I right in thinking this is possible? I'm assuming that I can edit Assets>Cheque Account & rename it Bank A, then create a new Assets>Cheque Account and rename to Bank B?

Yes, you can any number of bank accounts. To rename an existing account (eg. Cheque Account) double-click on it in the Accounts list. To create a new bank account click menu File > New > Account and set the Account Type to 'Asset'.
