Is there a way of showing opening balances on the accounts activity page and on the reports, so the tax man knows that parts of the income are carried over from the previous tax year.

You cannot see the opening balance on the Account Activity page (this is something we are working on). But you can change the Balance Sheet report date to be the end of the last financial year. This report will then show the opening balances for all accounts.
