This may sound trivial, but I find it scares me that I may lose notes accidentally.
On the notes tab of a customer, whenever I first click within the tab to add or edit notes, it always preselects the entire text. So if I then hit the keyboard, all text is deleted and replaced with the new text.
For other fields, that makes sense, but for customer notes, it does not - as they are not likely to be replaced with new notes, rather notes are appended. That's what I use it for anyway.
So I always have to remember to click once, and then once again...

Good news - the latest version of Solar Accounts no longer automatically selects the text when you click on the Notes field. You can upgrade here:
