What's the easiest way to create a customer activity report? I.e. invoices out and cash received?

Solar Accounts doesn't produce a customer activity report that includes payments. One option is to export the 'Customer Balances' report to a spreadsheet, then edit that spreadsheet in Excel to delete the rows which are not associated with that particular customer.

Best way is go to transactions, tick advanced filter, chose Customers, chose required customer account...this will show all invoices raised and payments received.
You can even use date field if only interested in certain period.

There is also another way.
Right click your customer and choose Show related transactions...
