We are looking to start again with a product listings on solar as so many have been added/changed over the years that we have many duplicates/versions of the same thing. However there lots of useful information on there that we need to keep. Is there a way to download/backup/print what we have on there now so that we can start again ?

Solar Accounts doesn't actually keep a list of product items - the list it
shows in the Invoice Description drop-down is simply all the items that
were on previous invoices. The closest thing to a list of product items
would be to export your invoices and quotes to a CSV file - click menu File
> Export To > Comma Separated File, then select only Invoices, Quotes and
Credit Notes. Later you can open the CSV file in Excel or Google Sheets to
search for a description and find the price.
