How do i record an opening balance in a cheque account at the start of solar accounts

Go to the Accounts list and double-click on Cheque Account to edit the opening balance.

I take it it is ok to change the balance at a later stage, as I am only just starting to use Solar and at present am setting it up on a test account to get to understand everything.

Yes, you can change the opening balance at any time.
