Is there a list of the recognised fields for the email template. e.g. [BUSINESS_NAME]. I was hoping to use [SALUTATION] to be a bit less formal, for example.

[DOCUMENT_TYPE]
[DOCUMENT_ID]
[BUSINESS_NAME]
[CONTACT_NAME]

We'll see if we can add [SALUTATION] in future.

It would also be useful to have a Document date, so for example if e-mailing an invoice the message would add the date of the invoice as well as the reference number

Just to add to this I would like to be able to add my account number for the supplier and a different name for the accounts department/person a this is usually different in the supplier details page and generally a sales contact.
