I installed the online version, selecting end-to-end encryption, and then invited my two colleagues to join the account. Neither of them chose this security level. Can we retrospectively apply it so we return to full encryption?

Sorry no - you cannot retrospectively apply end-to-end encryption to an
account. Here's what you will need to do:
Export your business to a backup file (click menu File > Create Backup >
On This Computer)
Click menu File > Close. Then select your existing business and click
'Remove'
Click Add > Import From Existing File, then select the backup file you
just created
Create a two new sharing codes as described here

and
send one to each of your colleagues
Your colleagues should then do the following:
Log into Solar Accounts with their existing user accounts
Click menu File > Close, then select the business name and click 'Remove'
Log out and click the 'Create new user account' link below the password
field
Enter personal contact information to create a new user account
Click 'Show advanced security options' and enable End-to-End encryption
Click 'Access a Shared Business' and enter the sharing code you sent them
